Varietal: Pacas, A sweeter and more productive variant to its original strain, the Pacas varietal is a natural mutation to its parent Borbon, and has been produced since 1949 in El Salvador.
Process: Black Honey, This coffee is handpicked, de-pulped and fermented overnight. On the following day, the cherries are dried in elevated beds over the course of 20 days with 4 hours of direct sunlight each day.
